Your Unique Device Identifier, also known as your UDID, is a sequence of 40 letters and numbers that are specific to the hardware of the iPhone that you bought.  This is what makes it unique to every other iPhone.  Think of it like a serial number only something that is much harder to actually guess.  It is important so that Apple will be able to identify the unit as legitimate and you will be able to install applications into it.
